I feel for this buck. I can’t even begin to imagine what happened to him. The injury doesn’t appear to be affecting him, but still...very nasty.

Nope! the spine would have ribs attached.
If you stop or pause the video it looks like the skin fat and connecting tissue was cut out with a scalpel. There are no bones, blood vessels or muscles showing along the back. There should be a spine with back-straps on either side of the spine and ribs under and on the sides from the spine down to the sternum.
All of that is "missing".

Thought they are on the left side of the spine not either.

Looks like loin, spine, ribs etc are there. I think its real... very painful looking for sure. That torn scapula is terrible.
